Look out to the Great Wall of China, as you coast through the Middle Kingdom. The vast repertoire of the country’s gastronomy is presented through three main cooking styles. The delicate cuisine of China's northern region is dominated by that of Beijing, the home of China's Imperial cuisine. Then there is the most celebrated style within and outside the country as well as the most sophisticated - Cantonese. Finally, Sichuan cooking’s vibrant dishes stand out for their use of some unique spices including Sichuan peppercorn and cassia bark. Dishes from other provinces complete the China sojourn.
